Chettinad Egg Tomato Kuruma

Egg-6 nos
Tomatoes-3
Big onion-1 chopped
Mint leaves-1 cup
Green chillies-4 slit
Chilly powder-2 tsp
Turmeric powder-1/2 tsp
Salt-to taste
Oil –1tbsp
Fennel Seeds-little
Method:
Hard Boil the eggs and peel and cut into two halves.
Put tomatoes in the hot water and peel off the skin and extract the juice.
Heat oil in a pan, add Fennel Seeds, chopped onions ,green chillies and sauté for five minutes.
Then add chilly powder, turmeric powder , tomato juice and mint leaves.
After some time add eggs amd remove from fire after a few minutes.
Garnish with coriander leaves.
