Ingredients:

  • Asian sweet chili sauce one table spoon is sufficient

  • Shredded carrot
  • ¼ cup snipped fresh cilantro
  • 6 fresh basil leaves, thinly sliced
  • Sprouts (alfalfa, bean, etc.)
  • Thin bite-size strips seedless cucumber
  • Green leaf lettuce
  • cellophane noodles
  • Rice paper sheets
  • Thinly sliced, turkey, cut into ⅛-inch strips
  • To make the dipping sauce, mix together chili sauce, rice vinegar and Sriracha sauce; set it aside.

Preparation:

In a small bowl combine the lettuce, cilantro and basil and bean sprouts. Take a bowl and fill it with warm water. Add some cellophane noodles into it to soak and leave it there for 15 minutes.  Once softened drain the excess water and keep it aside. You will be amazed to know that how the taste of spring rolls turns into a piece of delight by adding these cellophane noodles.

Then dip the rice paper into lukewarm water for about 10 seconds until it gets softened.

Take a softened rice paper on a plate. Place lettuce, cilantro and basil onto it. Add some sliced cucumber and carrots, only few slices.

Now it’s time to prepare the turkey. And take some thinly sliced turkey and drizzle in some soy sauce, add bit rice wine vinegar together with some sesame oil according to your preference. This mixture will moisten the turkey and really infuse it with some extraordinary flavour. Stir it around. Now throw in the cilantro and basil and bean sprouts in there, mix it again and it’s done.

Now let us get ready for the final and most interesting step.

Place the moistened rice paper on the work surface, then put a small little pile of cellophane noodle and a few pieces of lettuce. Then add a few thin strips of cucumber and not to forget about the yummy tasty turkey mixture on the top of the pile. All you need to do now is just fold up the wrap on both sides and roll it on up. The healthy low calorie turkey spring roll is now ready to be served. Eat this with the dipping sauce we made earlier with chilli sauce, rice vinegar and Sriracha sauce.
