Ingredients:
1/2 cup cooked, shredded chicken, cooked with
salt – 1/4 tsp
oil for frying shredded chicken – 1/2 tbs
1 small onion, chopped
soya sauce – 1/2 tsp
chilli sauce or pepper powder – 1/2 tsp
2 stalks spring onions, chopped
1 pinch ajinomoto
salt – 1/4 tsp
4 raw eggs

Method:
1. Heat a small kadai with 1/2 tbs. oil. Add chopped onion, fry for a minute till light brown.
2. Add cooked, shredded chicken, soya sauce, chilli sauce or pepper powder, stir and fry well for a minute.
3. Add chopped spring onions, ajinomoto and 1/4 tsp. salt. Stir well, remove and cool well.
4. Whisk 4 raw eggs. Heat a greased tawa, pour and spread half the egg mixuture for an omelette, then spread half the chicken mixture on top. Pour 2 tsp. oil around the omelette. Fold and remove when cooked and light brown.
Goes well with Fried rice or bread.
Makes two large omelettes.
