Ingredients
Shredded chicken pieces – 2 Cups
(from left over, chicken curry or chicken roast, or chicken poriyal)
Eggs – 4
Salt – To Taste
Turmeric Powder – 1 Teaspoon
Big Onion – 1 (Cut fine and fried)
Method
Beat the eggs wells. Add fried onions, fried green chillies, turmeric powder and salt. Heat a frying pan in medium heat, put oil, spread 1 laddle full of egg mixture, spread well, after 2 minutes when the egg begins to set add shredded chicken, cook for a few more minutes, roll into omelette. Repeat the same till the egg mixture is over.
Option: You can add shredded cooked meat, shredded cooked fish, fried cut mushrooms, shredded fried dried meat, cooked masala vegetable.
